A BOWL OF SOUP FOR JOEY

TO THOSE OF you who are new to my blog, my BF Joe was diagnosed with esophageal cancer (stage III) this past December. He's all done with his radiation and chemo treatments and is now able to eat again.

However, for the past two weeks, he's has been complaining of constant stomach pain. He finally went to see a GI today and he's scheduled to have a colonoscopy on August 14th.

When someone doesn't feel good, I always make Filipino soup. It's quick and very satisfying. I don't really measure when I cook (unless I'm baking) and I use whatever I have on hand.

In a boiling water (about 2 cups or just eyeball it), add tomato, red onion, ginger and thinly sliced beef and let it simmer for a while. Add green beans and let it boil. Season with salt and black pepper. I like to add sliced shrimps (if I have these available) and bring it to boil again. Finally, add spinach (or bok choy or napa cabbage) and scallions and take it off from the heat PRONTO!


And today's dinner... guess what? Another soup but it's the swordfish version. Tuna steaks would also be great for this.

As far as soup...I wish I could say I had a recipe, but unfortuanatley, I am not the cook around here. My hubby is. ;-)

Joey is one lucky guy! ; ) You are a wise one; the way to a man's heart and health is through his stomach and that soup is gorgeous! My stomach just growled as I sit here looking at it. Thanks for the cooking lesson. I will most certainly be trying this.

You're such a sweetie! He has a true and valuable friend in you! I have acid reflux, and was diagnosed with Barrett's Esophagus years ago. So I have to stay current on those endoscopies, etc. My thoughts are with you both.
